Formed loaf on the plank and ready to cook, glaze or no glaze.

For the meatloaf on planks. I don't soak them in water like some suggest.
I never found the need to.
I also reuse the planks even running them through the dishwasher.

Combine the ingredients for a simple curry catsup.

Meatloaf with the Curry Catsup glaze and on the BBQ ready to go.

Make sure the plank is not right under the fire.
This is called offset cooking. whether coals or gas, keep the fire away from direct flames underneath.
Put the cover down on the BBQ and let it slowly cook with the fire or charcoal and wood and let it add a bit of smoke. This will take about 45 min to an hour.

Ready to Serve

Mashed potatoes is such a perfect partner for a nice hot slice of meatloaf to lay upon,
but if your not into the extra carbs, you can use mashed cauliflower or a blend of potatoes and cauliflower
and also squash.
Here I did one with grilled cinnamon apples and creamed spinach.

You can make Baby Meatloaves as well, and put different toppings on them.

You can also serve this cold. It makes a nice summer dinner.

Here I did the meatloaf with Yams, and vegetable kabobs

The ideas are endless for this dish that is a winner and doesn't get old to most. |
